After pouring out all the water in the drinking water vat, Li Chenmo went to pick up the water barrels from the carts. She adds the onion and celery and cooks until the onion is translucent and the celery is almost tender, about 3 minutes.
Then she added bread cubes, garlic, Italian seasoning, so salt and chicken stock. She stirred until the bread began to soften, then removed it from the heat.
She then places the baking sheet on the aluminum foil, coats it with so olive oil, and places the chicken on top. She carefully loosened the chicken skin with her hands and massaged so butter evenly under the chicken's skin.
When the filling cools, she stuffed it loosely into the chicken to make sure there's so room for air to circulate. Then she brushed the outside of the chicken with so olive oil and sprinkled it with salt, pepper and dried oregano.
Afterward, she tied the chicken legs up with kitchen twine. Then she makes the gravy using her secret sauce, so chicken broth, and flour. She brushed it over the chicken, poured so over to keep it juicy, and then wrapped it in aluminum foil.
