Jiang Qiuqiu picked up a cleaver and used its spine to tap evenly all over the fish’s body. Then, she picked up a round, tal spoon, held it upside down, and began scraping from the tail upwards.
The scales ca off in sheets, like waves pushed aside by an unseen force. Soon, both fish were cleaned completely.
"With the first step done, we’ll begin the second: slicing the fish."
For pickled vegetable fish, slices that are too thick won’t absorb the flavor properly. However, Jiang Qiuqiu didn’t like to slice them too thin, either. If they were too thin, they would cook in an instant. Cooking them for too long would make them overly soft and mushy, falling apart at the slightest touch of a chopstick.
"To slice the fish, first cut off the head, tail, and fins. Then, slice the body into thin pieces about five milliters thick. You can take your ti with this step. Try to keep the slices as uniform in thickness as possible, otherwise it will be difficult to get the cooking ti just right."
