The next morning, as expected, Qin Huai got up late again.
A little earlier than the day before, but by the ti Qin Huai was fully awake and able to see the ti on his phone clearly, it was already 7:45 am.
How to put it, after so many years as a breakfast shop chef, Qin Huai deeply fell in love with the profession after experiencing over a month as a dim sum chef at Huang Ji.
Getting up late.
Qin Huai made Zheng Siyuan accustod to getting up early, but fell in love with sleeping in at Huang Ji.
Every ti he thought of this, Qin Huai felt truly sorry for Zheng Siyuan from the bottom of his heart.
This ti, Qin Huai did not publicly announce that he would resu normal operations at Yunzhong Restaurant. The dim sum that randomly appeared yesterday gave many old custors a bad feeling.
No one asked Qin Huai directly, but they inquired subtly on WeChat through Huang Xi and Qin Luo. Qin Huai instructed them to honestly tell everyone that he would only be back for a few days this ti and would make so dim sum at the restaurant, but not consistently.
Currently, the stable breakfast chefs at Yunzhong are Chen An and Qin Congwen, with Pei Xing and Li Hua as the dim sum chefs.
Since he had explained in advance, Qin Huai had no psychological pressure when he slept until 7:45. He leisurely washed up, took two cheese sticks and two dragon fruits from Luo Jun’s house from the fridge, ate them before heading to Yunzhong Restaurant.
The elderly folks on their morning jogs were still dedicated.
Yesterday, Grandma Ding had planned an outing with her friends to the suburbs. When she returned, she only caught the tail end of the dim sum. So she ca early this morning, around 6:30, waiting in the canteen, and quickly greeted Qin Huai with a large bag when she saw him.
"Master Qin, it’s been so long since you went to Gusu, and now you finally have ti to co back. I’ve been keeping an eye out for good locust flower honey while you were away. Look, here are the best ones."
"I have three bottles here. If you think the honey is fine, I have 26 more bottles at ho. I’ll bring them all over to you later!"
Grandma Ding said with a beaming smile.
Qin Huai instinctively reached out to take it.
During his ti at Huang Ji, he didn’t make locust flower buns often. The old custors there cherished the Fernted Rice with Stead Buns for its nostalgic value, making the locust flower buns and the fernted rice buns sell poorly when placed together, lacking prominence.
Moreover, it was difficult to find high-quality locust flower honey that t Qin Huai’s standards. Huang An Yao’s abilities were limited, and the honey he sourced from suppliers, while decent, couldn’t match what Grandma Ding found. Over ti, Qin Huai rarely made locust flower buns anymore.
Of course, it’s not the locust flower bun’s fault, but rather Qin Huai’s skill issue.
Locust flower buns are an A-level recipe, but Qin Huai’s skills are only at B-level, and he can’t quite understand the teaching videos yet.
Every ti he thought of this, Qin Huai couldn’t help but hold his head. It was hard to say whether it was his problem or Jiang Chengde’s problem. Jiang Weijin also had two A- grade recipes, slightly less but still at A-level, and Qin Huai could understand Jiang Weijin’s teaching videos.
When watching, Qin Huai even felt a sense of familiarity. Jiang Weijin had only two disciples, both of whom had taught Qin Huai. The teaching thod of this master seed very familiar to Qin Huai.
Qin Huai opened the jar of honey, slled it, looked at the color, but didn’t taste it. He was confident that the honey carefully selected by Grandma Ding would be among the finest.
"I was just worried about not having locust flower honey for making locust flower buns. Grandma Ding, I couldn’t find such good honey in Gusu. Thank you for taking the trouble to find it for ," Qin Huai said with a smile.
Hearing Qin Huai say this, Grandma Ding’s smile grew even brighter, as if imagining herself later this afternoon, carrying two large bags of Fernted Rice with Stead Buns while strolling through Yunzhong District, her back straightened with pride.
"It’s a small thing, Master Qin. Reach out anyti you need sothing," she replied.
Not engaging further in small talk, Qin Huai went to the changing room, put on his uniform, and started making dim sum in the kitchen.
Qin Huai planned to make only one kind of dim sum this morning—the Three at Buns.
Yesterday’s B-level Three at Buns had given Qin Huai great encouragent. Many of his dim sum could reach B-level quality, even his previous Three at Buns were close to B-level, typically at B- level. However, each dim sum was different.
In Qin Huai’s aesthetic sense, he thought his B-level Fernted Rice with Buns was better than B-level locust flower buns. The B-level guo’er was about the sa as the Fernted Rice with Buns, B-level Longevity Noodles were better than guo’er, and yesterday’s B-level Three at Buns were better than the B-level Longevity Noodles.
The locust flower buns were the worst because Qin Huai had made them very few tis and hadn’t thoroughly understood them.
Not able to understand the teaching videos, he subconsciously resisted that dim sum, and knowing clearly that his skills could not produce the desired effect, he avoided practicing it as much as possible.
Additionally, the difficulty of making locust flower buns was the highest among all his dim sum, with unique ferntation techniques and no other similar dim sum to refer to. Qin Huai didn’t know how to reasonably downgrade this A-level recipe, leading to locust flower buns being B-level, but still not quite B-level.
Qin Huai did well with the Fernted Rice with Buns, his recipe stayed at B-level, and Qin Huai’s Fernted Rice with Buns were absolutely qualified, though the potential was limited.
The recipe’s grade was evident, as was Qin Wan’s skill, and Qin Huai had never seen Fernted Rice with Buns above B-level. Zheng Da’s Fernted Rice with Buns were probably at a 60/40 ratio compared to Qin Huai’s, slightly better, close to A-level, but definitely not reaching A-level.
Zheng Da had also ntioned to Qin Huai that when he worked at a State-owned Restaurant, although he made stead buns and dumplings often, he personally disliked making these basic snacks, making a lot but not excelling at them.
